eggs, hard cooked
Dijon mustard
mayonnaise
Creole Seasoning
smoked paprika
lemon juice or lemon EVOO
instant minced onion soaked in lemon juice
OPTIONAL INGREDIENTS:
finely crushed potato chips
cooked bacon minced
chopped black olives
choppped green chiles
Cut hard cooked eggs in half lengthwise. Place yolks in a small bowl & mash until smooth. Add mustard and mayonnaise and stir well. Sprinkle in Creole Seasoning and taste. Spoon yolk mixture into egg whites. Sprinkle each egg half with a little paprika. Refrigerate until serving time.
